It’s one of our favorite gluten-free chicken recipes because the coating stays crisp on top while the meat stays juicy when cooked to the correct internal temperature.

I’ve made this gluten-free breaded Parmesan chicken for years, and it’s always popular. The key is not to overcook the chicken: remove it from the oven as soon as a meat thermometer reads 165°F (74°C). If you prefer dark meat, boneless skinless thighs work well too — just remove the skin before breading. The Parmesan in the coating adds savory depth and helps form a flavorful crust.

To keep this recipe safe for a gluten-free diet, use certified gluten-free breadcrumbs or an alternative like gluten-free corn flake crumbs. You can buy ready-made gluten-free breadcrumbs or make your own from leftover gluten-free bread heels by freezing them and grinding them into crumbs when you’re ready to cook. Corn flake crumbs are a great option because they stay crisp and resist becoming soggy the way some breadcrumbs can.

For a consistent result, set up an assembly line: one shallow bowl for the flour and seasonings, one for the beaten eggs with a splash of milk, and a third for the Parmesan-plus-crumb mixture. Coat each piece of chicken in flour, dip it in the egg mixture, then press it into the Parmesan-and-crumbs so the coating adheres well. Place the breaded pieces on a foil-lined, well-greased baking pan for easy cleanup.

How to make gluten-free breaded chicken

When preparing the chicken, use medium-sized breasts or cut very large breasts in half horizontally so each piece cooks evenly and the proportion of breading to meat stays balanced. Bake at 400°F for about 45–55 minutes; thinner pieces will cook faster, so begin checking with a thermometer at 30 minutes if your pieces are thin. I don’t flip the pieces during baking — leaving the bottom slightly moister helps keep the top and sides crisp.

While the chicken is in the oven you’ll have time to prepare sides. This chicken pairs especially well with roasted or Parmesan asparagus, gluten-free cornbread, or gluten-free pasta with a fresh tomato sauce. It also makes excellent leftovers for sandwiches or salads the next day.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 2 tsp salt
  • 2 tsp paprika
  • 1/4 tsp pepper
  • 2 eggs
  • 3 Tbsp milk
  • 2/3 cup grated Parmesan cheese
  • 1/3 cup gluten-free corn flake crumbs or gluten-free breadcrumbs
  • 3–4 lbs skinless chicken breasts or boneless skinless thighs

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking pan with foil and grease it lightly for easy cleanup.
  2. In a shallow bowl or pie plate, combine the gluten-free flour, salt, paprika, and pepper.
  3. In a second bowl, beat the eggs with the milk until blended.
  4. In a third shallow bowl or pan, mix the grated Parmesan with the gluten-free corn flake crumbs or breadcrumbs.
  5. Working one piece at a time, coat the chicken in the flour mixture, then dip into the egg mixture, and finally press into the Parmesan-crumb mixture until well coated. Arrange the breaded pieces on the prepared baking pan.
  6. Bake at 400°F for 45–55 minutes, or until a meat thermometer reads 165°F (74°C) in the thickest part of the chicken. If pieces are thin, check earlier. I typically do not flip the pieces during baking so the top stays crisp.

Notes

Check for doneness starting at 30 minutes if you used thin-cut chicken or tenders. If you want a darker crust, you can lightly spray the tops of the breaded chicken with oil before baking. For a lower-sodium version, reduce added salt — the Parmesan provides savory flavor.
