I love pizza, and these colorful little mini pizzas are irresistibly cute. They use a modest amount of mozzarella and plenty of fresh peppers, making them lighter than a traditional pizza but still full of flavor.

What We Need to Make the Tri Bell Pepper Mini Pizzas

  • For convenience I use premade pizza dough and pizza sauce. Store-bought dough works well; just know the base may vary slightly depending on what you use.
  • If you make your own dough and sauce, expect additional time — homemade sauce especially takes longer but can be made in large batches and preserved for later use.

Ingredients

  • 24 oz Pizza dough
  • 2 Cups Pizza sauce
  • 2 Cups Mozzarella cheese, grated
  • 2 Tablespoons Dried oregano
  • 1 Red pepper, diced
  • 1 Green pepper, diced
  • 1 Yellow pepper, diced
  • Arugula leaves for garnish

Instructions

  1. Preheat the oven to 425°F and place the rack in the lowest position. Prepare a large baking sheet.
  2. Divide the pizza dough into 16 equal pieces and roll each into a ball. Using a rolling pin, flatten each ball into a 4–5 inch round. Arrange the rounds on the baking sheet; you may need to bake in batches.
  3. Place a spoonful of sauce on each round, spreading it while leaving a small outer edge. Sprinkle with oregano, add diced peppers and top with grated mozzarella.
  4. Bake about 8 minutes or until the mini pizzas are puffed and golden on top.
  5. Remove from the oven, top with a few arugula leaves and serve immediately.
