Tri Bell Pepper Mini Pizzas

Ingredients
- 24 oz Pizza dough
- 2 Cups Pizza sauce
- 2 Cups Mozzarella cheese, grated
- 2 Tablespoons Dried oregano
- 1 Red pepper, diced
- 1 Green pepper, diced
- 1 Yellow pepper, diced
- Arugula leaves for garnish
Instructions
- Preheat the oven to 425°F and place the rack in the lowest position. Prepare a large baking sheet.
- Divide the pizza dough into 16 equal pieces and roll each into a ball. Using a rolling pin, flatten each ball into a 4–5 inch round. Arrange the rounds on the baking sheet; you may need to bake in batches.
- Place a spoonful of sauce on each round, spreading it while leaving a small outer edge. Sprinkle with oregano, add diced peppers and top with grated mozzarella.
- Bake about 8 minutes or until the mini pizzas are puffed and golden on top.
- Remove from the oven, top with a few arugula leaves and serve immediately.
