Ingredients:
- 2 boneless, skinless chicken breasts (or thighs)
- 1 large onion, diced
- 1 cup frozen corn
- 1 (17 ounce) can red beans, drained and rinsed (or substitute white, black, or pinto beans)
- 1 (19 ounce) can diced tomatoes with green chilies, undrained
- 1 cup chicken broth
- 1/2 cup ranch dressing
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 teaspoon salt

- 1 (8 ounce) package cream cheese, cubed

Instructions:
Place the chicken breasts in the bottom of the slow cooker. Add the diced onion, frozen corn, drained beans, diced tomatoes with green chilies, chicken broth, ranch dressing, cumin, chili powder, salt, and black pepper.

When the chicken is cooked through, remove the breasts and shred them with two forks. Return the shredded chicken to the slow cooker.

Add the cream cheese cut into cubes and stir to combine. Cover and cook on low for an additional 20–30 minutes, until the cream cheese is fully melted and the chili is creamy. While the chili finishes, cook the bacon in a skillet until crispy, then drain and chop.
Stir the chili one last time, taste and adjust seasoning if needed. Serve hot, topped with shredded cheddar cheese, chopped bacon, and sliced green onions. Optional toppings include avocado, sour cream, cilantro, lime wedges, or crushed tortilla chips for extra texture.
