Equipment
-
6 quart crockpot or slow cooker
Ingredients
- 2 medium yellow onions, chopped
- 4 boneless, skinless chicken breasts (about 3 lbs)
- Everything Bagel seasoning, to taste
- 12 oz Coca-Cola or another cola
- 2 cups barbecue sauce
- 1 tsp black pepper
- 1 TBS cornstarch
- 1/4 cup water
Instructions
-
Spray a 6-quart crockpot with non-stick cooking spray. Spread the chopped onions evenly across the bottom of the cooker.
-
Season the tops of the chicken breasts with Everything Bagel seasoning. Place the chicken breasts, seasoned side down, on top of the onions, then sprinkle additional seasoning over the tops.
-
Pour the cola around and between the chicken pieces, then spoon the barbecue sauce over the chicken. Finish with a sprinkle of black pepper.
-
Cover and cook on high for 4 hours or on low for 6–7 hours, until the chicken is fork-tender and cooked through.
-
If you prefer a thicker sauce, mix the cornstarch with the water to make a slurry, then stir it into the sauce and heat until it thickens.
-
Serve the chicken with your favorite barbecue sides, or shred it and pile it on buns for sandwiches.
