This post is long overdue.
Life has been busy: I work full time with a minimum two-hour daily commute (over 420 miles a week—thank goodness for my hybrid), and I also juggle family life, a house, and all the usual responsibilities. Add a dash of perfectionism that keeps me revising posts until I’m satisfied, and it’s easy to see why updates have been sporadic.
I’d love to be a full-time blogger someday, but for now blogging won’t replace my day job. To post more often I’m learning to streamline recipe testing and photo editing and to be a bit less perfection-driven.
This Roasted Tomatillo Salsa is simple to make and can be adjusted for heat. Roasting the vegetables deepens the flavor, similar to the Roasted Tomatillo Peach Salsa I shared recently. I used this salsa for Paleo Chicken Enchiladas Verdes, which is another post I plan to finish and publish soon.

Roasted Tomatillo Salsa (Salsa Verde)
Ingredients
- 10 medium tomatillos (about 2 lbs)
- 2 jalapeño peppers
- 2 serrano chiles
- 1 medium-small poblano pepper
- 4 garlic cloves
- 1/2 small white onion
- 1/2 cup chopped cilantro (about half a bunch)
- 2 tablespoons lime juice
- 1 teaspoon salt
Instructions
- Preheat your broiler. On a foil-lined baking sheet, arrange the tomatillos, jalapeños, serranos, poblano, and garlic (keep the onion aside).
- Broil the vegetables about 10 minutes per side, or until they are browned and slightly blackened in spots.
- Remove from the oven and let cool until safe to handle.
- Place the onion, cilantro, lime juice, and salt in a food processor and pulse a few times to combine.
- For a very hot salsa, add the roasted vegetables to the food processor and pulse until you reach the desired consistency.
- For a mild salsa, split the peppers and remove the seeds and membranes before blending. I usually leave half the seeds and membranes for a medium-hot result.
