I’m a big fan of peanut butter snacks — from peanut butter eggs to simple cookies — and I wanted to create a version that’s lighter but still delicious. This recipe is quick, one-bowl, and ready in about 15 minutes from start to finish.
My celebrity encounters
Since it’s almost my birthday, I’m sharing a few fun celebrity encounters I’ve had over the years:
1) On our very first trip to New York we were on the same flight as Kareem Abdul-Jabbar and stood next to him at the baggage carousel. I didn’t know who he was at the time — Adam pointed him out — and I still laugh about that now.
2) On another New York trip we shared a flight with Jason Derulo. Again, Adam recognized him even though he’s usually a heavy metal fan who swears pop music makes his ears bleed.
3) The closest I’ve been to a celebrity was standing next to Amber Heard at the mirror in the ladies’ bathroom at a football game in Australia. I was picking food out of my teeth right in front of her and didn’t realize who she was until later — slightly mortifying, but she was lovely and very down to earth in person.
No evidence
I don’t have selfies from these moments because I was too awkward to ask. However, I did find a photo Amber Heard posted from the game where you can spot Adam and me in the bottom right corner — proof that back-of-head fame is a thing!

The takeaway? I’m probably the worst celebrity spotter ever and have likely missed a bunch more. But I’m happy with the variety: a sports star, a singer, and an actress. Now your turn — have you ever spotted or met a celebrity in real life?

You can prepare the dough and be eating cookies in roughly 15 minutes (20 if you include preheating). Use the few extra minutes to tell me your celebrity story!

Healthy Peanut Butter Cookies

Do you love peanut butter and cookies and wish they could be healthier? If so, these healthy peanut butter cookies are exactly what you need.
Ingredients
- 4 tablespoons natural smooth peanut butter
- 2 tablespoons rice malt syrup or brown rice syrup (or honey/maple syrup)
- 3 tablespoons LSA mix (or plain almond meal)
- 1 egg
- 1 teaspoon vanilla essence
- 1/3 cup chocolate chips (I used dairy-free)
- 1 pinch salt (only if your peanut butter isn’t salted)
Instructions
- Preheat oven to 180°C (350°F) and line a baking tray with baking paper.
- Mix all ingredients together in a bowl until combined.
- Roll the mixture into balls and place on the baking tray. Flatten each ball slightly with the back of a fork.
- Bake for 8–10 minutes, until the cookies are lightly browned and cooked through.
- Cool on a wire rack for 10–15 minutes before serving.
- Enjoy!
Notes
