Peanut butter is one of life’s greatest comforts. I have fond memories of peanut butter sandwiches from childhood: soft white bread, margarine and a generous layer of the sugary, creamy peanut butter. Today I prefer using peanut butter in baking—its flavor and texture elevate so many recipes.

To celebrate this ingredient, I developed a healthier peanut butter cake that still feels indulgent. This recipe is flourless, producing a tender, moist crumb that many gluten-free cakes lack. It contains no eggs or dairy, and it’s free from refined sugar and oil.

  • Liquid sweetener: Maple syrup, agave, coconut sugar syrup or date syrup are all good options. Honey is also fine if you’re not vegan.
  • Peanut butter: Use smooth peanut butter made from peanuts only. Almond butter works as an alternative.
  • Oat flour: Simply blend oats to make your own oat flour if you don’t have any on hand.
  • Almond meal (ground almonds): Adds moisture and richness; almond flour can be substituted.
  • Baking powder: Use baking powder (do not substitute with baking soda).
  • Apple cider vinegar or lemon juice: Reacts with the baking powder to help the cake rise; white vinegar or lime juice can also be used.

For the healthier chocolate ganache you only need:

Step-by-step process

These cake bars are quick to make and perfect when you want cake without fuss. Follow the simple steps below.

  • Step 1: Preheat the oven to 180°C / 350°F (160°C fan) and line an 8-inch square tin with parchment.
  • Step 2: Whisk the wet ingredients—apple sauce, nondairy yogurt, liquid sweetener and peanut butter—until smooth. Stiffer peanut butter may take a minute more.
  • Step 3: Stir in the dry ingredients: oat flour, almond meal, baking powder and salt. Mix until combined.
  • Step 4: Transfer the batter to the prepared tin and spread evenly.
  • Step 5: Bake for about 20 minutes. The top should be slightly golden; a skewer inserted should come out mostly clean. If it’s still raw, bake a few minutes longer.
  • Step 6: Cool the cake in the tin on a wire rack while you make the ganache.
  • Step 7: Whisk cocoa powder, sweetener and nondairy milk or water until smooth, then pour over the cooled cake.
  • Step 8: Dollop extra peanut butter on top and swirl with a knife. Chill for at least 30 minutes before slicing with a hot, wet knife.

Baking tips

  • Different tin sizes: If you use a larger tin, double the recipe to avoid a very thin cake. With a smaller tin the cake will be thicker and need more baking time. A 7-inch round tin also works.
  • Slicing: For neat bars, dip a sharp knife in hot water before each slice and wipe it clean between cuts.
