
These salmon burgers — or salmon patties — are made from freshly chopped salmon and served with a simple homemade tartar sauce. They come together quickly and are perfect on buns, wrapped in lettuce, or placed on gluten-free rolls for a lighter option.
Very versatile, these patties can be topped with tartar sauce, avocado salsa, or your favorite condiments. Fresh herbs add bright flavor and a pleasant texture, so I recommend keeping them in the mix. This recipe yields six burgers and works well as a main dish or a salad topper — a great fish patty to try as warmer weather approaches.
INGREDIENTS:
PATTIES:
- 1 lb fresh salmon
- 2 TBSP mayo
- 1 tsp mustard
- 1/2 tsp salt & 1/4 tsp pepper
- 2 dinner rolls, broken into pieces
- 2 TBSP freshly chopped cilantro or parsley
- 1 egg
- 6 buns & 6 slices American cheese
Quick Tartar Sauce:
- 1/2 cup mayo
- 3 TBSP sweet relish
- 1 tsp vinegar
- 1/2 tsp whole-grain mustard
- Salt & pepper to taste
Directions:
- Preheat your grill to high heat.
- In a mixing bowl combine all patty ingredients except the salmon. Let the torn dinner roll pieces soak and soften in the mayo, mustard, egg, herbs, salt, and pepper.
- While the bread softens, cut the salmon into small chunks and gently fold it into the soaked mixture. Shape into six even patties.
- Place the patties on lightly oiled grill grates, then reduce the heat to medium. Grill for about 3 minutes per side, until cooked through and nicely seared.
- To make the tartar sauce, whisk together the mayo, sweet relish, vinegar, whole-grain mustard, and salt and pepper. Spread about a tablespoon of tartar sauce on the top bun. Assemble each burger: bottom bun, salmon patty, a slice of American cheese, and the top bun with tartar sauce.

Instructions
- Preheat grill to high heat.
- Combine all the patty ingredients except the fish and let the bread soak up and soften.
- Meanwhile cut the fish into small chunks and add to the mixture. Form into 6 patties.
- Place patties onto lightly greased grill grates and reduce heat to medium. Grill 3 minutes on each side.
- To make the tartar sauce: whisk all the tartar sauce ingredients together. Spread a tablespoon of tartar sauce on the top buns and assemble the burgers in this order: bottom bun, patty, slice of American cheese, top bun (with tartar sauce).
