Surprise Cupcakes — simple to make and delightful for every occasion. Below you’ll find clear tips for filling cupcakes with sprinkles or other delicious fillings.

I’m a total fan of sprinkles — I add them to birthday cupcakes, Valentine treats, doughnuts, cakes, and even homemade ice cream. A sprinkle-stuffed cupcake adds a playful, festive element that delights kids and adults alike.
What you need for surprise cupcakes?
- Baked cupcakes (any flavor)
- Frosting for decorating
- Filling of choice — sprinkles, jam, caramel, or curd work great
How to make surprise cupcakes
- Cut or scoop a small portion from the center of each cupcake
- Pack the cavity with sprinkles or your preferred filling
- Pipe or spread frosting over the top to seal and decorate
- Serve and enjoy the surprise inside!

A while back I made hidden-cache cupcakes for a mini food series and filled them with sprinkles like hidden treasure. Since then I’ve adapted the idea for seasonal treats — Fourth of July cupcakes with a red-white-and-blue sprinkle explosion and colorful piñata cupcakes that burst with confetti when cut.

Filled cupcakes aren’t limited to sprinkles. Caramel, lemon curd, chocolate ganache, or a dollop of jam make excellent surprises that complement many cupcake flavors.

How do I cut the hole out of the cupcake?
Use a spoon, melon baller, or even a small knife to remove the center. An inverted-cone shape works well: wider at the top and tapering slightly so the filling stays in place and the frosting can cover the opening neatly.
What else can I fill cupcakes with?
Ideas for fillings: sprinkles, frosting, caramel, lemon curd, chocolate ganache, small candies, or bite-sized chocolates. You can spoon or pipe thicker fillings and press softer fillings in by hand.

What kind of cupcakes should I use?
Any cupcake base works — chocolate, vanilla, yellow, or more adventurous flavors like orange-marmalade. The filling choice can enhance or contrast the cupcake flavor: caramel and chocolate for chocolate cupcakes, lemon curd for vanilla or white cupcakes, and sprinkles for a colorful surprise.

- Sprinkles — lots!
- Frosting
- Piping tip (I like the 1M)
- Piping bag
Instructions
-
Use a spoon, melon baller, or small knife to cut a circle from the top of each cupcake and scoop out some of the interior to create a cavity for the filling.

-
Pack the hole with sprinkles — press them in so they stay put — or spoon in caramel, jam, or lemon curd for a gooey center.

-
Fill a piping bag fitted with your favorite tip and pipe a generous swirl of frosting, starting over the filled cavity and spiraling outward and upward to seal and decorate.

-
Finish by sprinkling extra decorations on top or adding any final touches you like.
