Chicken Wing Skewers for a Party

 

This Chicken Wing Skewers recipe features three styles cooked over the fire. First are zesty, slightly spicy Chile Lime Wings marinated overnight in achiote paste, lime juice and seasonings. Second are crisp Garlic Parmesan Wings that are dry-brined, cooked, then tossed in a buttery garlic-parmesan sauce. Third are bright, herb-forward Chimichurri Wings with a quick fresh marinade.

Ingredients 

Sauces:

  • Primal Kitchen Ranch
  • Primal Kitchen Buffalo Ranch
  • Primal Kitchen Queso

Chimichurri Wings:

  • 1 lb of Chicken Wings

Chimichurri Marinade:

  • ¼ cup Chopped Parsley
  • cup Red Wine Vinegar
  • 8-10 Minced Garlic
  • 2 tbsp Chopped Oregano
  • 1 tbsp Black Pepper
  • 1.5 tsp Red Chili Flakes
  • Olive Oil to desired consistency
  • Kosher Salt to taste

Garlic Parmesan Wings:

  • 1 lb of Chicken Wings

Dry Brine:

  • 2 tbsp Kosher Salt
  • 2 tbsp Black Pepper
  • 2 tbsp Garlic Powder
  • 1 tbsp Hot Sauce
  • 1 tbsp Canola Oil

Garlic Parmesan Sauce:

  • 1 stick Melted Butter
  • 2.5 tbsp Chopped Parsley
  • 2 tbsp Grated Parmesan
  • 2 tbsp Minced Garlic
  • 1 tsp Red Chili Flakes

Chile Lime Wings:

  • 1 lb of Chicken Wings

Marinade:

  • 2.5 tbsp Chipotle Puree
  • 1.5 tbsp Garlic Paste
  • 1.5 tbsp Achiote Paste
  • 4 medium Limes juiced
  • Kosher Salt to taste

Instructions 

  • Place each wing variety in its own food-safe bowl. For the Chile Lime wings, combine the marinade ingredients, toss the wings to coat, cover and refrigerate for at least 4 hours or overnight. For the Garlic Parmesan wings, mix the dry brine, coat the wings, cover and refrigerate for at least 4 hours or overnight. Prepare the Chimichurri the day you plan to cook: combine the herbs, garlic, vinegar, oil and seasonings, add to the wings and marinate 1–2 hours.
  • When marinades are complete, discard excess liquid, skewer the wings, and set aside until ready to grill.
  • Preheat the grill for direct cooking at medium heat (around 325°F).
  • Grill the skewered wings until they reach 165°F internal temperature, about 20–30 minutes. Turn as needed for an even crust. Remove and rest the wings for 5 minutes.
  • While the Garlic Parmesan wings rest, combine them in a large bowl with the melted butter, parsley, parmesan, garlic and red chili flakes. Toss well to coat.
  • Remove the wings from skewers, arrange on a platter and serve with Primal Kitchen Ranch, Buffalo Ranch and Queso. Enjoy!
