Frozen S’mores Pie Recipe: No-Bake Chocolate Graham Dessert

August 10 is National S’mores Day — and what better way to celebrate than with a Frozen S’mores Pie?

Frozen S’mores Pie captures the classic campfire trio of chocolate, marshmallow and graham crackers in an easy, no-bake dessert that’s perfect for summer.

If you’re unfamiliar with a S’more: it’s a roasted marshmallow with a piece of chocolate sandwiched between two graham crackers. The name comes from “some more” because once you try one, you’ll want another. The Girl Scouts popularized the treat, and the story of graham crackers ties back to Sylvester Graham, a 19th-century Presbyterian minister who promoted a plain, whole-wheat cracker for moral and dietary reasons.

Note: Graham crackers were developed in the 1800s as a simple, bland cracker made from coarse whole-wheat flour. That history explains why graham crackers pair so well with sweet, melty ingredients like chocolate and marshmallows.

This is a vintage recipe

This dessert is a recipe from my childhood. Back then we made it in a 9×13 pan as a frozen torte and devoured it every night. Nowadays I make a smaller 9″ pie to fit my freezer and household. To scale the recipe back up to a 9×13, simply double the filling and make the crust for a larger pan.

One small update to the original card: my mom’s recipe called for an 8 oz Hershey bar. Today Hershey bars come in different sizes, so I usually use a 7 oz bar plus an extra regular bar (1.55 oz) or a 6-pack of regular bars to reach the amount of chocolate I want. More chocolate is always a fine choice.

The recipe includes instructions for a homemade graham cracker crust, which gives the best texture, but a store-bought crust works in a pinch.

How to make Frozen S’mores Pie

This recipe adapts the old-fashioned double boiler method for modern kitchens: the microwave makes melting the chocolate and marshmallows quick and simple.

Start by melting the chocolate, marshmallows and milk together, then chill the mixture in the refrigerator until it’s completely cold.

Whip the cream until it holds stiff peaks, then fold it gently into the chilled chocolate-marshmallow mixture so the filling stays light and airy.

Pour the filling into the prepared graham cracker crust and freeze for at least 6 hours, or until solid.

After it freezes, slice and serve — the flavors of toasted marshmallow and melted chocolate with a crunchy graham crust are exactly what you’d hope for in a s’mores dessert.

Ingredients

  • 8 oz Hershey bar up to 9oz
  • ½ cup milk
  • 20 marshmallows
  • 1 cup whipping cream
  • ½ stick butter
  • 7-8 Graham crackers

Instructions

  • Break the chocolate into pieces. Place the marshmallows, chocolate and milk in a large microwave-safe bowl. Microwave 2 minutes, stir, then microwave an additional 30 seconds if needed until fully melted and smooth.
  • Chill the melted mixture in the refrigerator until cold.
  • Crush the graham crackers in a food processor or a sealed bag with a rolling pin. Melt the butter, combine with the crumbs, then press the mixture into a pie plate to form the crust. Freeze to set.
  • Whip the cream until stiff peaks form, then fold it into the chilled chocolate-marshmallow mixture.
  • Pour the filling into the graham cracker crust and freeze at least 6 hours, until firm.
