
The intense summer heat has arrived and shows no sign of leaving—daily temperatures top 100°F here in California. I limit outdoor time to early mornings or pool visits at friends’ houses; otherwise the heat is just oppressive. It can make anyone a little cranky, but a simple solution helps: frozen treats.
“Popsicles for breakfast!” I announced after making these dairy-free peach berry yogurt popsicles, and my kids were delighted. I love surprising them with new, refreshing recipes. These popsicles use fresh fruit, coconut milk and coconut milk yogurt for a creamy, dairy-free treat. They’re lightly sweetened and perfectly acceptable as a morning snack or a cooling afternoon pick-me-up.
Take a moment to try this recipe—the heat is miserable, and a fresh fruit popsicle is just the kind of relief we need. The peach layer is my favorite: ripe, juicy peaches bring natural sweetness and summer flavor that pairs beautifully with the bright berry layer.

- Peach layer
- 1 1/2 cups peeled and sliced fresh peaches
- 1/2 cup lite culinary coconut milk
- 1/3 cup unsweetened coconut milk yogurt
- 1–2 tablespoons cane sugar or pure maple syrup, to taste
- Berry layer
- 1 1/2 cups fresh blackberries or raspberries
- 1/2 cup lite culinary coconut milk
- 1/3 cup unsweetened coconut milk yogurt

- Make the peach layer: combine peaches, coconut milk, coconut yogurt and sweetener in a blender. Blend on high until smooth, about 1–2 minutes.
- Pour the peach mixture into popsicle molds, filling them about one-quarter full. Reserve the remaining peach mixture in a pourable container.
- Make the berry layer: combine berries, coconut milk, coconut yogurt and sweetener in a blender. Blend on high until smooth, about 1–2 minutes. If desired, strain the berry puree through a fine-mesh sieve to remove seeds.
- Assemble: pour berry mixture over the peach layer to fill molds halfway. Alternate another peach layer and finish with berry mixture. Use a wooden skewer to gently swirl the layers for a marbled effect.
- Insert sticks and freeze until fully set, 3–4 hours or overnight.
- To unmold, run the molds briefly under warm water for 10–15 seconds, then gently remove the popsicles.
