The poppers in the photos were made in a corn dog maker, but you can get the same flavor and crunch using a mini waffle maker to create chaffle-style poppers. No corn dog or waffle maker? No problem — there’s also a baked method using crushed pork rinds for a crispy coating.
Ingredients for crunchy keto jalapeño poppers
For the jalapeño poppers:
- 6 fresh jalapeños (about 4 inches long if using whole peppers)
- 1/2 block (4 ounces) cream cheese
- 2 eggs, beaten
- 3/4 cup grated cheddar (or your favorite melting cheese)

- 3/4 cup sugar-free strawberry jam (store-bought or homemade)

- Add a thin layer of beaten egg over the cheese, then arrange jalapeño slices on top.
- Sprinkle more cheese, close the waffle maker, and cook until crisp (about 4–6 minutes, depending on your machine).
- Spread cream cheese on one cooked chaffle, top with another cooked piece, and press gently to create a sandwich.
- Cut into strips or bite-sized pieces, then dip in Bronco Berry sauce and enjoy.

Baking sheet method (Baked crunchy keto jalapeño poppers)
- Add 1/2 to 1 cup crushed pork rinds for a crunchy coating, depending on how many poppers you make.
- Preheat oven to 350°F. Fill peppers with cream cheese.
- Dip each stuffed pepper in beaten egg, then roll in crushed pork rinds to coat.
- Place on a baking sheet, sprinkle extra cheese on top if desired, and bake about 30–40 minutes until peppers are tender and the coating is golden and crisp.

- 3/4 cup sugar-free strawberry jam
- 1 teaspoon (or more) minced jalapeño
- Dash each onion powder and garlic powder
Jalapeño Poppers:
- 6 jalapeños
- 4 ounces (1/2 block) cream cheese
- 3/4 cup grated cheese
- 2 eggs, beaten
Instructions
- Prepare the Bronco Berry sauce by whisking jam, minced jalapeño, onion powder, and garlic powder in a small bowl. Add water a teaspoon at a time to reach your desired consistency. Set aside.
- Preheat the oven to 400°F if softening peppers before coring.
- Cut stems off jalapeños and core them using a coring tool or a small knife. Repeat for each pepper.
- To soften peppers before filling, place them on a parchment-lined baking sheet and roast 7 minutes, turn, then roast another 7 minutes. Allow to cool slightly.
- Cut the cream cheese into sticks that fit inside the jalapeños and insert.
- If using a corn dog maker: sprinkle 1 tablespoon grated cheese into each slot, add about 1½ tablespoons beaten egg, set the stuffed pepper on top, then sprinkle another tablespoon of cheese over each. Close the lid without latching and cook 7–8 minutes or until steam stops and edges are crisp. Remove with a thin spatula.
- Serve hot with Bronco Berry sauce for dipping.
