- 1–2 tablespoons of oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 Tablespoons red bell pepper, chopped finely
- 1/4 – 1/2 cup water
- 1 cup sour cream
- 8 ounce cream cheese (or Neufchâtel for a lighter version)
- 2–3 tablespoons mayonnaise
- 1 teaspoon salt (or more to taste)
- 1 1/2 teaspoon Worcestershire sauce

- Heat the oil in a skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion is very soft, slightly browned, and sweet—about 8–12 minutes depending on your pan. The goal is gentle caramelization without letting the onions burn.
- Add the minced garlic and finely chopped red bell pepper and cook for about 30 seconds more, just until fragrant.
- Remove the pan from heat and set the cooked onion mixture aside to cool to room temperature.
- In a food processor, combine room-temperature cream cheese, sour cream, mayonnaise, salt, and Worcestershire sauce. Using room-temperature cream cheese helps the mixture blend smoothly.
- Pulse the mixture until smooth, stopping to scrape down the sides a few times. Add water a tablespoon at a time if you want a thinner consistency.
- Add the cooled onion, garlic, and pepper mixture to the processor and pulse just until everything is incorporated. You want the onions distributed evenly but still a bit textured—not completely pureed.
- Taste and adjust seasoning. Add more salt or Worcestershire sauce to balance the flavors as needed.
- Transfer the dip to a lidded container and refrigerate for at least an hour before serving to let the flavors meld. The dip keeps well in the refrigerator for 3–5 days.
