Creamy Boursin Spaghetti

Ingredients
- 200 g pasta (of your choice)
- 1 tablespoon olive oil
- 4 smoked bacon rashers, chopped
- 1 garlic clove, peeled and chopped
- 150 g Garlic and Herb Boursin cheese
- 50 g Grana Padano or Parmesan, grated
- 2 tablespoons parsley, finely chopped
Instructions
- Bring a pan of salted water to the boil and cook the pasta according to the packet. Reserve 1 cup of pasta water before draining.
- Heat 1 tablespoon of olive oil in a frying pan and cook the chopped bacon and garlic over medium heat until the bacon is crisp and cooked through.
- Stir in the Boursin cheese and about half a cup of the reserved pasta water. Mix until the cheese melts and becomes a smooth sauce. Add more pasta water, a little at a time, until you reach the desired consistency.
- Toss the drained pasta into the sauce to coat evenly.
- Stir in the grated Grana Padano (or Parmesan) and chopped parsley. Season to taste and serve hot.
