Ingredients

  • 1/2 cup half-and-half
  • 2 tablespoons truffle oil (or to taste)

For the crispy kale

  • 1–2 tablespoons olive oil
  • 1 large kale leaf, stems removed and finely chopped
  • Salt and pepper, to taste

Instructions

  1. In a large soup pot, heat 2 tablespoons olive oil over medium-high heat.
  2. Add the diced onion, celery, and carrots. Sauté until softened, about 5–7 minutes, stirring occasionally so the vegetables don’t brown too quickly.
  3. Add the minced garlic and cook for about 1 minute until fragrant.
  4. Stir in the cauliflower florets, pour in the vegetable broth, and add a pinch of cayenne if using. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes, or until the cauliflower is very tender.
  6. While the soup simmers, make the crispy kale: heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the chopped kale and cook, stirring, until the kale is bright green and slightly crisp, about 4–6 minutes. Add a second tablespoon of oil if needed. Season with a little salt and pepper and set aside.
  7. Once the cauliflower is tender, remove the pot from the heat. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a high-speed blender and puree until silky.
