If anyone ever criticizes you for loving hummus, politely reconsider their place in your life. Hummus is one of my favorite snacks — and for good reason. Its versatility means you can reinvent it any time without getting bored.

Traditional hummus centers on chickpeas, but don’t let that limit you. Add any ingredients you love to create your own signature version. If you think hummus is just an overrated dip, think again — it makes incredible sandwiches and spreads as well.

Ingredients
- 450 g chickpeas cooked or canned
- 200 g beetroot roasted and peeled, or pickled
- 2 cloves garlic
- 2 tablespoon tahini
- 3 tablespoon olive oil
- 3 tablespoon lemon juice
- 3 tablespoon water
- 1 teaspoon sundried tomato chopped
- 1 teaspoon salt
Instructions

Place the chickpeas in a food processor and blend until they reach a smooth, dough-like consistency. Add the garlic, tahini, olive oil, lemon juice, water, sundried tomato and salt, then process until you reach your preferred texture. You may need to add more water depending on your processor and the chickpeas. Finally, add the beetroot and pulse briefly until combined. You can leave small beetroot pieces for texture or blend until completely smooth.

Serve immediately or chill in the refrigerator. Stored in an airtight container, this beetroot hummus will keep for up to four days. The lemon juice helps preserve freshness.
