Ingredients

  • 1/2 cup natural sweetener (Swerve or xylitol)
  • 1 cup chunky peanut butter
  • 2 teaspoons vanilla extract
  • 1/4 cup coconut milk
  • 1 cup old-fashioned rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free or high-cacao chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the peanut butter and natural sweetener until smooth. Add the vanilla and coconut milk and mix well.
  3. In a separate bowl, combine the oats, whole wheat flour, baking soda, and salt.
  4. Stir the dry ingredients into the peanut butter mixture until evenly combined.
  5. Fold in the chocolate chips, reserving a few to press on top if desired.
  6. Press the mixture firmly into a greased 9×9-inch baking dish.
  7. Bake for 17–20 minutes, until the edges are set and a toothpick inserted in the center comes out clean.
  8. Allow to cool completely before cutting into squares.
