It’s been a while since our last post in this series, which went up in the spring. Now that summer is winding down, we wanted to share a roundup of recipes from other creators that we’ve been making and loving lately. When I love a recipe, I tend to make it on repeat, so everything here has been tried and tested. Fair warning: it’s been a rainy summer here in the UK, so my choices lean toward comforting dishes rather than light, sunny fare. We enjoy highlighting recipes from blogs and cookbooks and hope you’ll try a few of these favourites for yourself.

Detroit-style Pizza from King Arthur Baking
I’m not always a strict recipe follower — I like to adapt as I go — but when trying something for the first time I do my research. For Detroit-style pizza, this King Arthur recipe quickly became my go-to. I don’t always stick rigidly to the traditional method (I prefer my sauce spread evenly under the cheese), but the dough and technique produce a fantastic base. If you enjoy a thick Sicilian-style crust with crispy, caramelized edges, this one is for you. It’s forgiving with toppings, too, making it a great recipe to return to time and again.

New York Style Bagels from Sophisticated Gourmet
Finding a good bagel in the UK can be a challenge. Shop-bought versions often lack chew, and bakery bagels tend to be smaller than the ones I grew up with. A great bagel should be chewy on the outside and soft and bready inside, with a generous size and a small central hole. I like mine topped with seeds and coarse salt, then split and loaded with plain or scallion cream cheese, sliced tomato, salt, and pepper. Because I crave bagels regularly, I bake a batch on Sundays for the week. This New York-style recipe delivers that satisfying chew and can be customized with different seeds or flours — highly recommended if you love bagels.

Satay Sweet Potato Curry from Deliciously Ella
This cookbook has appeared on our blog before because it consistently delivers delicious, mostly fuss-free plant-based recipes. While I’m not strictly vegan and sometimes adapt ingredients based on what I have, the recipes here are excellent. The satay sweet potato curry is one of my go-to dishes — hearty, flavorful, and perfect if you enjoy peanut-based curries or noodle bowls. It’s a comforting, satisfying meal and one of my favourite recipes from the book.

Coconut Lime Chicken
When you want a quick, satisfying weeknight meal with minimal fuss, this coconut lime chicken is a winner. We made it recently and found it comes together fast while keeping the chicken tender in a fragrant coconut-lime sauce. Served with rice, it’s comforting and filling, and because it’s a one-pan meal, cleanup is simple — always a bonus on busy evenings.

Summer Rolls
We get a lot of dinner inspiration from TikTok, and a recent clip from Cassie (@cassyeungmoney) had us making summer rolls right away. They’re incredibly versatile — use whatever fresh vegetables, herbs, and protein you have on hand. They’re light and refreshing, perfect for warm days, and we’ve enjoyed them with shrimp, tofu, red cabbage, and sliced jalapeños. Cassie’s homemade peanut dipping sauce is great, but store-bought peanut sauce works fine for a quicker option. Below is the original TikTok embed showing her method and sauce recipe.
@cassyeungmoney I get addicted to these every summer #summerrolls #vietnamesespringrolls Board by @melanated.maker Peanut dipping sauce: 3 Tbsp peanut butter 3 Tbsp hoisin sauce 2 Tbsp rice vinegar 1 garlic clove grated (Makes 1/2 cup of sauce, double if you’d like more!) Chop your veggies (I used cucumber, carrots & lettuce) and set to the side. To boiling water, add in your shrimp and cook about 2 minutes or until the shrimp are slightly curled and no longer translucent. Remove and add straight into an ice bath. To the same water, quickly dunk in your rice noodles then strain and rinse under cold water to avoid overcooking. Dip your rice paper into room temperature water and lay flat on your board (don’t worry if it’s still a little hard, it’ll soften as it sits). Lay down your lettuce, veggies, rice noodles and herbs (I used cilantro & mint). Roll once then lay 3 pieces of shrimp face down so that they show when it’s rolled. Continue rolling to cover the shrimp then fold in the sides. Add a piece of green onion to have it hanging out one side. Finish the roll, serve with your sauce topped with crushed peanuts and enjoy!
