10 Delicious Flatout Flatbreads for Quick Meals and Snacks

I have a bit of an obsession with flatout breads. I honestly use them all the time — they make meal prep and portion control so much easier. Most varieties are only 2–4 Weight Watchers points each, and they’re versatile enough to create sweet treats, savory pizzas, quesadillas, and grilled sandwiches. Below are some of my favorite combinations that are simple, satisfying, and perfect for quick meals or snacks.

Strawberry Cinnamon Sugar Mini Pizzas

Ingredients: 1 Flatout Fold It (I use 5 grain & flax), 1 Tbsp sugar, 1 tsp cinnamon, fresh strawberries, and a little whipped cream.

Method: Cut the Fold It in half. Mix the sugar and cinnamon in a small bag, sprinkle most of the mix onto the bread (reserve a little for topping), and spray the bread lightly with cooking spray. Bake at 350°F for 5–7 minutes, watching so it doesn’t brown too much. Remove, sprinkle the remaining sugar mixture, top with strawberry slices and a dollop of whipped cream. Nutrition: about 5 WW points / 3 PP for both pieces.

Taco Pizza

Ingredients: 1 Flatout artisan pizza bread, 1/3 cup light grated cheese (I use a WW Mexican blend), 5 oz cooked extra-lean ground beef seasoned with taco seasoning, diced peppers, and onions.

Method: Top the pizza bread with beef, peppers, onions, and cheese. Bake at 325°F for 10–15 minutes until the crust is slightly crisp and the cheese melts. Nutrition: whole pizza is about 12 WW points / 10 PP.

Banana S’mores Quesadilla

Ingredients: 1 Flatout original light, banana slices, 1/4 cup mini marshmallows, and 1 square of broken Lindt 70% dark chocolate.

Method: Arrange banana slices on half the bread, sprinkle with marshmallows and chocolate, fold the other half over, and bake at 325°F for about 7–8 minutes. It’s a little messy but worth it. Nutrition: about 6 WW points / 4 PP total.

Chicken Bacon Ranch Grilled Cheese

Ingredients: 1 Flatout Fold It (5 grain & flax), 1/4 cup light grated cheese (WW Mexican blend), 1 oz shredded cooked chicken, 1 slice low-point cooked bacon (e.g., center cut), and about 1/2 Tbsp light ranch dressing.

Method: Assemble the sandwich, spray a pan with cooking spray, and grill like a classic grilled cheese until golden and the cheese is melted. One of my favorite lunches. Nutrition: about 6 WW points / 6 PP.

BBQ Chicken & Ranch Pizza

Ingredients: 1 Flatout original light, 1/3 cup light grated cheese (WW Mexican blend), 2 oz cooked shredded chicken, 1 Tbsp barbecue sauce, and 1 Tbsp light ranch dressing.

Method: Spread cheese and chicken on the flatbread, top with barbecue sauce, and bake at 325°F for about 10 minutes. Drizzle ranch over the pizza after removing it from the oven. Nutrition: about 9 WW points / 8 PP for the whole pizza.

Banana, Peanut Butter & Chocolate Grilled Sandwich

Ingredients: 1 Flatout Fold It (5 grain & flax), banana slices, 1/2 Tbsp melted peanut butter, 1 square broken 70% Lindt dark chocolate.

Method: Layer banana on half the bread, drizzle with melted peanut butter (about 40–45 seconds in the microwave), add chocolate pieces, fold, and grill in a pan sprayed with cooking spray until both sides are golden and the filling is gooey. Delicious and slightly messy. Nutrition: about 5 WW points / 4 PP.

Cinnamon Sugar Fruit Crisps

Ingredients: 1 Flatout Fold It (5 grain & flax), 1 Tbsp sugar, 1 tsp cinnamon, and your choice of fruit.

Method: Cut the Fold It in half, then cut each half into quarters (a pizza cutter works well). Mix sugar and cinnamon and sprinkle most over the pieces, reserving a little to finish. Spray pieces with cooking spray and bake at 325°F for 5–7 minutes, watching carefully. Top with chopped fruit and the remaining sugar-cinnamon mix. Makes a great afternoon snack. Nutrition: about 5 WW points / 3 PP for all 8 pieces.

Fruit Pizza

Ingredients: 1 Flatout artisan pizza bread (regular white), 3 Tbsp light Cool Whip, banana and strawberry slices, and 1 square melted Lindt 70% dark chocolate.

Method: Spread Cool Whip on the bread, arrange fruit slices, and drizzle with melted chocolate. Light, refreshing, and simple. Nutrition: whole pizza is about 7 WW points / 6 PP.
