Sweet and Spicy Red Bell Pepper Relish Recipe for Summer Jars

My friend Jenn from Bread + Butter invited food bloggers to join a “Blogger Secret Ingredient” challenge featuring bell peppers. I waited until the last day to make my contribution, but the result is far from rushed. Here I present a simple, flavorful recipe for Red Bell Pepper Relish.

This relish is quick to prepare and wonderfully versatile. I plan to jar it in small canning jars for gifts. Its balance of sweet and savory notes makes it delicious spread on brie or cream cheese, served with crackers, or even paired with pretzels. A pinch of red pepper flakes adds a gentle, lingering heat that brightens the flavor without overpowering it. Homemade relish like this easily tops anything you can buy at the store.

Red Bell Pepper Relish Recipe
(yields about 3/4 cup)

Ingredients:
– 1 red bell pepper (or another color), finely chopped
– 1/2 medium onion, finely chopped
– 2/3 cup granulated sugar
– 1/2 cup white vinegar
– 1/2 teaspoon red pepper flakes (use 1/4 teaspoon for milder heat, or add an extra 1/4 teaspoon for more)

Directions:
1. Combine the chopped bell pepper, chopped onion, sugar, white vinegar, and red pepper flakes in a small saucepan. Stir to evenly distribute the ingredients.
2. Place the pan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Cook for about 5 minutes on medium to dissolve the sugar and soften the vegetables.
3. Reduce the heat to medium-low and continue to simmer for another 15–20 minutes, stirring from time to time, until most of the liquid has reduced and the mixture has thickened to a jam-like consistency.
4. Remove the pan from the heat and let the relish cool to room temperature. Transfer to a clean jar and refrigerate. The relish can be served chilled or at room temperature and will keep for several weeks in the refrigerator.

Serving suggestions: spread it on warm toasted baguette slices, spoon it over cream cheese or brie for a quick appetizer, use it as a condiment on sandwiches and burgers, or enjoy it with crackers or pretzels. This simple, homemade relish adds bright color and balanced flavor to many dishes.
