I started with my mother’s recipe and tweaked it over the years. Switching to Yukon Gold potatoes gives a richness that, when gently mixed, lets some pieces break down into a creamy base. The game-changer is pickle juice. Inspired by cooking techniques shared by J. Kenji Lopez-Alt, I learned that pouring pickle juice over hot potatoes infuses them with a lively tang that deepens the overall flavor. Combined with mayonnaise and mustard, the result is a potato salad that’s both creamy and vibrant.

It might seem like a lot of salt in the water to boil the potatoes, but that, along with the pickle juice, helps season the potatoes from the inside out.

Measure dill pickle juice into a small bowl or measuring cup and set aside.

Add potatoes and 1 tablespoon salt to 3 quarts water in a large saucepan. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are tender, about 25–30 minutes.

Meanwhile, in another bowl combine mayonnaise, mustard, red onion, green onions, pickles, and 1 teaspoon salt.

When potatoes are tender, drain thoroughly and place hot potatoes in a large bowl. Sprinkle the reserved pickle juice over the potatoes and stir gently to coat.

Gently fold the mayonnaise mixture into the potatoes, taking care to leave some pieces intact for texture.

This salad can and should be made in advance. It’s best served the next day. Cover and refrigerate for at least 3 hours before serving. Leftovers keep up to 4 days refrigerated.
