Looking for a comforting side dish with a fresh twist? These spinach mashed potatoes deliver everything you want from a classic mashed potato—creamy, buttery, and satisfying—while adding a bright, earthy note from spinach. They make a wonderful addition to a holiday table or an easy weeknight dinner.

This recipe has become a family favorite and a meaningful memory. My husband’s family celebrates Thanksgiving on the Saturday after the holiday, and their meals tend to be less rigidly traditional and more about what people feel like making. That’s how I first encountered these potatoes: they were brought by my husband’s late Aunt Leah, who had a knack for comforting, uncomplicated dishes that tasted like home.

At first I was skeptical—greens in mashed potatoes?—but one bite changed my mind. The spinach blends into the potatoes so nicely that it adds flavor and color without overwhelming the texture. Sautéed onion adds a sweet, savory note that elevates the whole dish. These potatoes are rich and buttery and can stand alone without gravy, though they pair beautifully with roasted meats and vegetables.

After Aunt Leah passed away, I set out to recreate the recipe as a way of honoring her memory. Over time I refined it into the version below: straightforward, flavorful, and easy to scale for a crowd. If you’re used to making mashed potatoes from scratch, this adds just a few simple steps—sautéing onion and spinach—to turn a familiar side into something a little more special.

Spinach mashed potatoes

This recipe is easy to follow if you already make mashed potatoes: add a quick sauté of onion and spinach and fold it into classic mashed potatoes.

If your family is sensitive to onions, consider finely dicing and slowly sautéing them until very soft and sweet—they add depth, but you can omit them if necessary.

Don’t be intimidated by the amount of spinach: it wilts down dramatically when cooked and blends into the potatoes rather than standing out as a separate ingredient.

Sauté the spinach until it’s fully wilted so its texture melds with the mashed potatoes; raw spinach will not give the same result.

These mashed potatoes are a great way to use Thanksgiving leftovers—stir sautéed onion and spinach into leftover mashed potatoes, and add chopped turkey or ham for a complete, reheated meal.

Ingredients

3 lbs potatoes, peeled and roughly diced

1/2 cup butter (1 stick)

1 medium onion, diced

4 packed cups fresh spinach, roughly chopped

1/2 cup sour cream

1–2 cups milk, cream, or half-and-half (adjust for desired consistency)

Salt and pepper, to taste

Instructions

Peel and roughly dice the potatoes into even pieces so they cook uniformly.

Place potatoes in a large pot, cover with cold water, and bring to a boil over medium-high heat. Cook until potatoes are tender when pierced with a fork.

While the potatoes cook, melt the butter in a heavy skillet over medium heat.

Add the diced onion to the melted butter and sauté until the onion is soft and translucent, about 5–8 minutes. This step develops sweetness and depth of flavor.

Add the chopped spinach to the skillet with the onion. Stir continuously until the spinach is completely wilted and any excess moisture has cooked off. Remove the pan from heat and set aside.

When the potatoes are tender, drain them well and return them to the pot. Mash the potatoes, seasoning generously with salt and pepper as you go.

Stir in the sour cream and then add milk, cream, or half-and-half a little at a time until you reach your preferred consistency—creamy and smooth but not soupy.

Fold the sautéed onion, spinach, and butter mixture into the mashed potatoes until everything is evenly combined. Taste and adjust salt and pepper as needed.

Serve the spinach mashed potatoes hot as a stand-alone side or alongside your main dish. Leftovers reheat well; add a splash of milk when reheating to refresh the texture.

Notes

These mashed potatoes pair nicely with roasted poultry, beef, or a simple vegetarian main. For a lighter version, reduce the butter and replace some of the dairy with low-fat milk, though the full-flavored version is especially comforting for holiday meals. If you prefer a smoother texture, use a potato ricer before adding the dairy.

This brownie cupcake recipe is for chocolate lovers: tender, moist, and delightfully fudgy. They’re finished with a glossy, smooth, not-too-sweet sour cream chocolate frosting that balances the rich cake perfectly.

The inspiration and recipe testing

These brownie cupcakes went through several iterations before arriving at the final version. The first attempt started as brownie cheesecake muffins and didn’t go as planned. After that I tried plain brownie muffins, which turned out moist and tasty but didn’t rise the way I wanted. Finally I aimed for cupcakes—flat tops that are ideal for frosting—and refined the batter until the texture and rise were just right.

The frosting had its own set of mishaps. My initial plan included melted chocolate folded into a sour cream frosting, but when I tried tempering the chocolate with sour cream it seized. After some experimentation I discovered the frosting is excellent without melted chocolate—silky, glossy, and quick to make, with no extended chilling required. With multiple trials and adjustments, the recipe became a keeper.

Sour cream chocolate frosting

If you prefer something less sweet than classic buttercream, this sour cream chocolate frosting is worth trying. It uses less powdered sugar and more cocoa for a deeper chocolate flavor, while the sour cream adds a subtle tang and a silky, glossy finish. The tanginess balances the sweetness without tasting like straight sour cream—it’s velvety and rich, and most people won’t guess there’s sour cream in it.

How to bake perfect brownie cupcakes

Bake time determines texture: a slightly underbaked cupcake yields a fudgier center, while a longer bake produces a more cake-like crumb. Avoid overbaking—if a skewer comes out completely clean, the cupcakes will be dry after cooling. The ideal test is a skewer with moist crumbs but no wet batter. Allow the cupcakes to cool completely in the pan; residual heat continues cooking them gently and helps achieve a fudgy interior.

How to make brownie cupcakes

1. Melt butter and add the chocolate. Combine hot melted butter with chopped chocolate until smooth. Let the mixture cool slightly while you prepare the remaining ingredients.

2. Whisk eggs and sugars. There are no baking powder or soda agents in this recipe: the rise comes from air incorporated into the eggs. Beat eggs with granulated and brown sugar until the sugar dissolves and the mixture lightens in color. Rubbing a bit between your fingers is the best check—there should be no graininess.

3. Add the cooled butter–chocolate mixture, cocoa, vanilla, oil, and salt. Whisk until combined. 4. Fold in flour and chocolate chips just until the batter is streak-free—do not overmix. 5. Portion into a cupcake tin and bake. Line the tin with paper liners or grease and flour the cups. Fill each cup about ¾ full.

6. Cool completely in the pan to room temperature before removing the cupcakes to a wire rack. If you underbaked for a fudgier center, the top may sink slightly as it cools—this is normal. 7. Make the sour cream frosting: it comes together quickly in two steps:

Cut cold butter into powdered sugar and cocoa. The dry mix will look crumbly; aim for small butter pieces but a few larger bits are okay.

Beat in vanilla, salt, and sour cream. Add sour cream in two additions and whip until smooth and fluffy for a silky finish.

8. Frost your cooled cupcakes. The frosting holds shape well while remaining soft and glossy.

How to decorate brownie cupcakes

This frosting behaves like a hybrid between cream cheese frosting and buttercream: smooth, glossy, and stable enough to pipe. For a quick finish, place a dollop and swirl with a knife for a soft, rustic look. Finish with chocolate shavings, sprinkles, or flaky sea salt according to your preference.

Storage

Store the cupcakes covered to prevent drying. Unfrosted, they keep about 4 days at room temperature; frosted cupcakes will last up to one week refrigerated. If chilled, let them sit at room temperature for about 30 minutes before serving so the frosting softens and the texture improves.

Ingredients

For the brownies:

½ cup (115g) unsalted butter

6 ounces (170g) chopped semi-sweet chocolate, good quality

¾ cup (150g) granulated sugar

½ cup (100g) packed brown sugar (light or dark)

3 large eggs, at room temperature

1 teaspoon pure vanilla extract

½ cup (40g) unsweetened cocoa powder

2 tablespoons neutral vegetable oil

½ cup + 2 tablespoons (80g) all-purpose flour, spooned and leveled

¼ teaspoon salt

½ cup (85g) semi-sweet chocolate chips (optional)

For the chocolate sour cream frosting:

½ cup (115g) unsalted butter, softened

1 cup (130g) powdered sugar

½ cup (40g) unsweetened cocoa powder

¼ teaspoon salt

1 teaspoon pure vanilla extract

½ cup (120g) full-fat sour cream, at room temperature

Chocolate shavings, sprinkles, or flaky sea salt for decorating (optional)

Instructions

Make the brownies:

Preheat oven to 350°F (175°C). Line a standard 12-cup cupcake tin with paper liners or grease and dust with flour.

Melt the butter in a small saucepan over medium heat, then remove from heat.

Add the chopped chocolate to the hot butter and whisk until completely melted and smooth. If some pieces remain, return briefly to very low heat to finish melting. Let cool slightly.

Beat the eggs and sugars together in a large bowl with an electric mixer using the whisk attachment until the sugar dissolves and the mixture lightens in color (about 5–7 minutes). It should not feel gritty when rubbed between your fingers.

Stir in vanilla, cocoa, oil, and the cooled chocolate–butter mixture until combined.

Fold in flour, salt, and chocolate chips just until the batter is uniform and streak-free. Do not overmix.

Fill the cupcake cups about ¾ full with batter.

Bake in the center of the oven for 15–20 minutes, until the tops are crackly and a skewer comes out with a few moist crumbs. If you prefer fudgy centers, err on the shorter end of the time.

Cool completely in the tin before removing to a rack and frosting.

Make the sour cream frosting:

Cut the butter into the powdered sugar and cocoa using a mixer with the paddle attachment until the mixture resembles fine crumbs.

Add vanilla, salt, and half the sour cream and mix to combine. Add the remaining sour cream and whip on high until light and fluffy, about 1–2 minutes.

Frost the cooled cupcakes and decorate with chocolate shavings, sprinkles, or flaky sea salt as desired.

Notes

I recommend using baking or couverture-style chocolate for smooth melting, but high-quality or good-value chocolate both work—just chop it evenly for consistent melting.

Bánh bột chiên is a Vietnamese street-food favorite defined by contrasting textures: crisp, golden edges and a soft, chewy center. Small rice flour cakes are pan-fried until they develop a crunchy exterior, then tossed with eggs and chopped scallions so the eggs bake into and around the cake pieces, creating rich, savory pockets. It’s traditionally served with pickled vegetables and a bright, tangy soy-based dipping sauce that cuts through the richness.

If you’ve tasted bot chien from a Saigon street vendor, you know how addictive it is straight off the griddle—the crackle of the crisp crust, the tender bite of the rice cake, and the eggy coating. The technique is simple and forgiving at home once the rice cakes are made or sourced.

Why You’ll Love This Recipe

Crispy outside with a soft, chewy center

Simple ingredients, easy to find at Asian markets

Budget-friendly and filling

Perfect for breakfast, a snack, or a quick meal

Authentic Vietnamese street-food flavor you can recreate at home

What is Bột Chiên?

Bột chiên is a popular Vietnamese snack made from steamed rice-flour cakes that are pan-fried to develop a caramelized crust, then mixed with eggs and scallions. Street vendors cook it on a large flat griddle and often chop the cakes as they fry, finishing the dish with pickled carrots and daikon (do chua) and a light soy dipping sauce. The acidity of the pickles balances the fried richness, making each bite bright and satisfying.

This dish is commonly eaten for breakfast or as a late-morning snack, but it’s versatile enough for any time you want something crispy and comforting.

Kitchen Tools That Help

Large mixing bowl and whisk — to make a smooth batter without lumps.

Steamer pot or a pot with a rack — to steam the rice cakes until set.

Heatproof pan for steaming — round or square pans work.

Large skillet or wok — wide surface for evenly crisping cakes.

Ingredients and Why They Matter

The success of bot chien comes from technique as well as a few key ingredients. Rice flour (bột gạo) forms the base of the cakes and gives them structure; use regular rice flour, not glutinous rice flour, to avoid gummy, overly sticky cakes. Tapioca starch (bột năng) adds chewiness and helps the center stay tender while the outside crisps.

After the batter is steamed into cakes and chilled, the cakes are cut into pieces, tossed with a little soy seasoning (Maggi or regular soy sauce works), and pan-fried. Eggs and scallions are added during frying so the eggs cling to the cake pieces and create golden edges and pockets of rich flavor. Pickles—either shredded green papaya or classic pickled carrots and daikon—provide crunch and acidity, while a simple dipping sauce of soy, vinegar, and sugar ties the flavors together.

How to Make Bột Chiên at Home

Pickle the vegetables

If you plan to make pickled carrots and daikon (do chua), prepare them first so they have time to marinate. Even 30 minutes will improve the flavor.

Cook the rice flour batter

Cook the batter briefly on the stove or in the microwave to hydrate the starches and eliminate lumps. Stir continuously while heating until the mixture becomes a thick, smooth paste—similar in consistency to mashed potatoes. This step prevents the cakes from separating during steaming.

Steam the rice cakes

Grease your heatproof pans so the cakes release easily. Pour the batter into pans, smooth the tops, cover, then steam until fully set and slightly translucent—about 20 minutes depending on pan size. A toothpick in the center should come out clean. Let the cakes cool completely, then refrigerate for several hours or overnight; chilling firms the cakes and makes them easier to slice and crisp in the pan.

Cut and pan-fry

Cut the chilled cakes into cubes or rectangles. Heat oil in a large skillet over medium-high heat and add the rice cake pieces without crowding—give each piece room to crisp. Let them fry undisturbed for 1–2 minutes to develop a golden crust, then flip. Add beaten eggs and chopped scallions to the pan; let the eggs set slightly, then gently fold so they coat the rice cakes. Cook until eggs are fully set and the cakes are crisp on all sides.

Serve

Serve bot chien hot with pickled carrots and daikon or shredded green papaya, extra chopped scallions, and a small bowl of sweet-tangy soy dipping sauce. The plate should balance crisp, chewy, tangy, and savory elements.

Pickled carrots and daikon (do chua)

Shredded green papaya (optional)

Chopped scallions

Sweet soy dipping sauce (soy, vinegar, sugar; add sliced Thai chilies if desired)

Shortcut: Using Store-Bought Rice Cakes

Making rice cakes from scratch takes time, so many cooks use pre-made options available at Vietnamese or Asian markets. Good substitutes include thinly sliced Korean rice cakes, taro cakes, or Chinese turnip (radish) cakes. Turnip or taro cakes crisp especially well and are closest to the texture of traditional bot chien.

How to Store and Reheat

Store leftover rice cakes in an airtight container in the refrigerator for up to 3 days. Keep pickles and dipping sauce separate to preserve texture and freshness.

To Reheat

Stovetop (best): Pan-fry with a little oil until crisp again.

Air fryer: 350°F for 3–5 minutes.

Oven: 375°F for 5–7 minutes.

Avoid microwaving when possible, as it softens the crisp edges.

Servings: 4

Ingredients

Rice Flour Cake

2 cups rice flour (bột gạo)

3 tablespoons tapioca starch (bột năng)

3 cups water

2 teaspoons vegetable oil

1 teaspoon salt

For Frying

1 tablespoon soy sauce or Maggi seasoning

1 tablespoon neutral oil (avocado, vegetable)

6 eggs

2 scallions, chopped

Pickled Vegetables

1 cup shredded carrots

1 cup shredded daikon or green papaya

3 tablespoons white vinegar

2 tablespoons sugar

1 teaspoon salt

Dipping Sauce

1/4 cup soy sauce

2 tablespoons vinegar

2 tablespoons sugar

Thai chili slices (optional)

Instructions

Pickle the vegetables. Combine shredded carrots and daikon (or papaya) with vinegar, sugar, and salt in a bowl or jar. Chill until serving.

Cook the rice batter. Whisk rice flour, tapioca starch, water, oil, and salt until smooth. Cook over medium heat, stirring constantly, until the mixture thickens into a smooth paste.

Steam the rice cakes. Grease heatproof pans, pour in the batter, smooth the tops, and cover. Steam about 20 minutes until set. Cool completely, then refrigerate for at least 4 hours or overnight.

Cut and fry. Cut chilled cakes into cubes. Heat oil in a skillet over medium-high heat. Add rice cubes and fry undisturbed until golden (2–3 minutes). Flip, pour in beaten eggs and add scallions. Let eggs set slightly, then gently fold so eggs coat the cakes. Cook until eggs are fully set and cakes are crisp.

Make the dipping sauce. Stir together soy sauce, vinegar, and sugar until the sugar dissolves. Add sliced chilies if desired.

Serve. Plate hot bot chien with pickled vegetables and dipping sauce on the side.

Notes

Chill the rice cakes before cutting for the best texture and easier slicing.

Use medium-high heat so the cakes crisp rather than steam.

Do not overcrowd the pan—give pieces space to develop a crust.

A guideline is about 2 eggs per cup of rice cakes for balanced egg coverage.

Turnip cake or taro cake are good store-bought shortcuts that crisp well.

Tips for the Best Bot Chien

Chill rice cakes before frying—cold cakes crisp much better.

Give each piece space—avoid overcrowding the pan.

Let the cakes sit undisturbed to develop a deep golden crust.

Adjust egg ratio to preference; around 2 eggs per cup of cake is a good starting point.

Use medium-high heat so the cakes crisp quickly without overcooking.

⭐ Air Fryer Rotisserie Cornish Hen

Ingredients for this rotisserie Cornish hen:

2 lb Cornish hens, thawed (total about 907 g)

Cooking spray (olive oil spray recommended)

Salt and pepper, to taste — or use your favorite seasonings such as garlic powder, onion powder, poultry seasoning, thyme, rosemary, paprika, or lemon pepper

A printable recipe card appears below in the recipe block.

To prepare Cornish hens on a rotisserie you will need an air fryer with a rotisserie spit attachment and a meat thermometer. Popular models that support rotisserie cooking include larger air fryer ovens from several brands. Cooking time can vary by model, so always check the internal temperature rather than relying solely on time.

🍗 How to Air Fry Cornish Game Hens

Follow these steps to make Cornish hen using the air fryer rotisserie:

1

Pat the skin of each Cornish hen dry with paper towels — this step helps ensure a crispy skin. Lightly mist the hens all over with cooking oil spray, then season with salt and pepper or your chosen spice blend.

2

Secure the Cornish hen on the rotisserie spit. Cook one hen at a time unless your spit can hold two without the birds touching or overlapping; overlapping causes uneven cooking and prevents proper browning.

3

Air fry the Cornish hen at 350°F (175°C) for about 40 minutes, or until the thickest part of the thigh reaches a minimum safe internal temperature of 165°F (74°C). If you want extra-browned, crisp skin, increase the heat to 400°F (200°C) for the last 5 minutes. Let the hen rest for 10 minutes before carving and serving to allow juices to redistribute.

⏲️ How long to cook a Cornish hen in an air fryer rotisserie?

Expect the rotisserie Cornish hen to take about 40 minutes at 350°F (175°C). Times can shift based on hen size and air fryer model, so use a thermometer to confirm the 165°F (74°C) safe internal temperature.

How long does it take to rotisserie two Cornish hens in one air fryer?

Only cook two hens at once if they fit on the spit without touching. In a large rotisserie oven, two hens should take roughly 40–45 minutes at 350°F (175°C). Avoid overlapping birds, since that can cause uneven cooking and increase food-safety risk.

💭 Expert Tips from Dietitian Summer Yule

This recipe is a straightforward, balanced option for many eating plans. Cornish hens are lean, filling protein sources that provide niacin, phosphorus, and other nutrients. They work well in gluten-free, low-carb, and keto diets.

Portion size can be generous. Many people serve half a hen per person; consider offering extra vegetables or lighter sides if you want to control calories.

For lower fat intake, remove the skin before eating. If you prefer flavor, keep the skin—crispy skin adds a lot of taste.

FAQs

How do you tie a Cornish hen for a rotisserie?

Because Cornish hens are small, trussing is usually unnecessary. Trussing can prevent the legs from spreading, but it also limits browning between the legs. If you prefer to truss for presentation, follow standard poultry trussing steps used for small chickens.

Should Cornish hens be cooked covered or uncovered?

Cook Cornish hens uncovered on the rotisserie so the skin browns and crisps evenly.

What temperature should Cornish hens be?

Always ensure the thickest part of the hen reaches an internal temperature of 165°F (74°C). Use a reliable meat thermometer for best results. Color alone is not a dependable indicator of doneness.

Can you cook Cornish hens frozen?

It’s best to thaw Cornish hens in the refrigerator for 24–48 hours before cooking. Because they are small, they thaw relatively quickly. Cooking from frozen is possible in some appliances but usually requires adjustments and may not brown as well.

How many people does one Cornish hen serve?

A whole Cornish hen often serves one very hungry person, but typically one hen is shared between two people, especially when served with sides.

Does Cornish hen taste like chicken?

Yes — Cornish hens taste like chicken because they are a small variety of chicken. Their flavor is similar to regular chicken, often described as slightly more tender due to their size and younger age at processing.

Make this fresh, colorful corn, black bean, and tomato salad with vegan avocado lime dressing all summer long — and keep it in rotation afterward. The roasted corn provides a sweet, smoky note that pairs beautifully with juicy cherry tomatoes and hearty black beans. Tossed in a lime-forward avocado dressing, the salad is bright, creamy, and satisfying.

This recipe works well as a standalone meatless main course, or as a side dish for grilled meats, fish, or plant-based proteins. It travels well for potlucks, picnics, and cookouts, and it adapts easily to your pantry and produce availability.

A creamy vegan avocado lime dressing elevates this Mexican-inspired summer salad

The avocado lime dressing is silky, tangy, and a little spicy if you include jalapeño. It blends avocado, lime juice, olive oil, garlic, and a bit of water for a smooth texture that coats every bite. This dressing is versatile: use it as a salad dressing, a sauce for roasted vegetables, or a topping for tacos and wraps.

For best results, be generous with the dressing—its creaminess balances the crispness of the vegetables and enhances the overall flavor. If you enjoy leftover dressing, store it in an airtight container in the refrigerator and use it within a day or two; the lime juice helps slow browning.

Next time, try this dressing drizzled over roasted sweet potatoes or as a sauce with turkey or chicken lettuce wraps to add a bright, creamy element to savory dishes.

Instructions

Preheat the oven to 375°F (190°C). Place the corn on the oven rack while still in their husks and roast for about 35 minutes, or until the husks are browned and the corn emits a sweet, roasted aroma. Remove and let cool until you can handle them.

While the corn cools, combine the diced red onion, drained and rinsed black beans, and quartered cherry tomatoes in a large mixing bowl. Add the lime juice and sea salt, toss gently, and set aside to allow the flavors to meld.

To make the avocado lime dressing: place the avocado, jalapeño (if using), garlic, lime juice, olive oil, water, and sea salt into a blender or food processor. Blend until smooth and creamy, adjusting the water or oil as needed to reach your preferred consistency.

Remove the husks from the cooled corn, slice the kernels off the cobs, and add them to the mixing bowl. Pour the avocado lime dressing over the salad and toss until everything is evenly coated. Finish with a sprinkle of chopped cilantro and serve immediately.

Last year I experimented with a comforting fall side dish: maple vanilla sweet potatoes roasted and served inside small hollowed-out pumpkins. The result was a warm, visually charming presentation that combines the natural sweetness of sweet potatoes with the cozy flavors of maple syrup and vanilla. It’s a dish that feels both rustic and festive, perfect for autumn dinners and holiday gatherings.

These maple vanilla sweet potatoes are remarkably simple to prepare. The core steps involve roasting or steaming the sweet potatoes until tender, gently mashing them with butter, pure maple syrup, and pure vanilla extract, then returning the mixture to a vessel for baking and presentation. Using mini pumpkins for serving makes the dish feel special, but it’s by no means required—there are plenty of practical alternatives depending on how much effort and oven space you want to use.

If you prefer a low-fuss approach, pipe the sweet potato mixture into small custard cups or ramekins. This method is quick, clean, and elegant. For an even easier route, spoon the mixture into one large baking dish and bake until the top is slightly golden. You can finish with a few decorative swirls of the sweet potato mash for a simple, attractive look. A sprinkle of toasted pecans or a light drizzle of extra maple syrup right before serving adds texture and a final burst of flavor.

The flavor profile is balanced: maple syrup enhances the natural sugars of the sweet potato, while vanilla adds a warm aroma and depth that is more complex than a plain sugary mash. Butter provides creaminess and a silky mouthfeel. If you like, a pinch of sea salt brings everything into sharper relief, cutting through the sweetness and highlighting the other ingredients. For a spicier variation, add a teaspoon of cinnamon or a pinch of nutmeg—both pair beautifully with sweet potato and maple.

Serving suggestions and variations: for a savory-sweet twist, fold in a small amount of mascarpone or cream cheese to the mash. To make the dish vegan, use a plant-based butter substitute and ensure your maple syrup is pure. For extra texture, stir chopped toasted pecans, walnuts, or even pomegranate seeds into the filling or scatter them on top before serving. A light crumble of granola-like toasted oats can add an unexpected crunch that contrasts nicely with the creamy sweet potato.

Storage and reheating: these sweet potatoes hold up well in the refrigerator for three to four days in an airtight container. Reheat gently in a low oven until warmed through, or microwave in short intervals, stirring occasionally. If you used a pumpkin as the serving vessel and want to reuse the pumpkin, it will soften and can be eaten along with the filling, though texture will be softer than when the pumpkin is freshly roasted.

Occasions: this recipe works beautifully for weeknight meals when you want something comforting and nutritious, but it also shines at holiday tables like Thanksgiving or any fall-themed gathering. The mini pumpkin presentation makes each portion feel individual and festive, while the simpler ramekin or casserole options are convenient for larger groups.

Whether you make these maple vanilla sweet potatoes today or save them for a holiday, they’re easy to adapt and worth making more than once a year. They’re comforting, flexible, and always a crowd-pleaser—perfect for bringing a warm, seasonal touch to any meal.

Layers of golden-brown biscuits, creamy sausage gravy and seasoned pork come together in a simple, comforting Biscuit and Gravy Casserole that’s ideal for a weekend breakfast, holiday brunch, or feeding a crowd.

Biscuit and Gravy Casserole Recipe

This biscuit and gravy casserole captures the familiar flavors of a Southern biscuits-and-gravy breakfast but in an easier, bake-and-serve format. It layers partially baked biscuits, cooked ground pork or crumbled sausage, and warm country-style gravy, then tops everything with the remaining biscuits and a butter glaze. The result is a hearty, crowd-pleasing dish that reheats well and can be adjusted to suit your tastes.

Because it relies on only a few components, it’s a great semi-homemade option when you want big flavor with minimal hands-on time. Swap seasonings, add maple or spicy sausage, or use homemade gravy if you prefer — the casserole is adaptable and forgiving.

Why This Biscuit Breakfast Casserole Works

Only a few basic ingredients are needed, and the casserole comes together quickly.

Flavor is easily customized by changing the sausage type or adding herbs and spices.

It’s classic comfort food that’s reliable for breakfasts, brunches, or casual gatherings.

Using ground pork gives you flexible seasoning options and can be cost-effective.

Ingredients Needed

1 pound ground pork or pork sausage — cook and crumble; adjust seasonings as desired.

2 cans (15 oz each) country-style sausage gravy — canned gravy saves time; homemade gravy also works.

2 tubes (16 oz each) refrigerated jumbo biscuits — butter-flavored or buttermilk biscuits work well.

1 teaspoon black pepper — freshly ground for best flavor.

3 tablespoons butter, melted — brushed on top for shine and extra richness.

Why Use Ground Pork?

Sausage is simply seasoned ground pork. Using plain ground pork lets you control the seasoning — add maple for a sweeter breakfast, Italian herbs for a dinner-style dish, or crushed red pepper for heat. Ground pork also makes it easy to increase protein in the casserole without relying on pre-seasoned sausage.

Three ounces of pork supplies significant protein, which helps you feel full and satisfied. Custom-seasoning the pork is fast and lets you tailor the casserole to your household’s flavor preferences.

Biscuit Preparation Notes

Cutting refrigerated biscuits into quarters helps them bake more quickly and makes serving easier. If you prefer to use homemade biscuits, bake them just until barely golden so they won’t overcook when the casserole returns to the oven.

How to Make the Casserole

1. Preheat oven to 375°F. Grease a 9 x 13-inch baking dish with nonstick spray.

2. Cut each biscuit into quarters. Arrange half of the pieces in a single layer across the bottom of the prepared dish.

3. Bake the bottom layer for 12–15 minutes, until the biscuits are mostly cooked but not fully browned. This prevents the bottom layer from remaining doughy after assembly.

4. While the biscuits bake, brown the ground pork or crumbled sausage in a skillet and drain excess fat on a paper towel.

5. Spread the cooked pork evenly over the partially baked bottom biscuits.

6. Pour the canned gravy into the warm skillet, whisk and cook briefly until it just begins to brown — this develops flavor. Pour the warm gravy over the sausage layer and season with freshly ground black pepper to taste.

7. Arrange the remaining biscuit pieces in a neat single layer across the top of the casserole.

8. Bake uncovered about 10 minutes to allow the top biscuits to begin browning. Cover loosely with foil and bake an additional 15 minutes, or until a biscuit piece in the center is flaky and fully cooked through.

9. Remove from the oven, brush the top biscuits with melted butter for extra flavor and shine, then let rest a few minutes before serving.

Recipe Tips & Tricks

Use two cans of gravy plus an extra pound of cooked sausage for a hearty result; maple sausage adds a pleasant sweetness.

Flaky, butter-flavored biscuits are preferred; brush extra melted butter on top after baking for best appearance and taste.

Warming and lightly browning the gravy in the skillet before pouring it in adds depth of flavor — don’t skip this step.

This casserole is an excellent way to use leftover gravy or cooked sausage.

To make a smaller batch, use an 8×8 or 9×9 baking dish and halve the ingredients.

Rotate the pan in the oven toward the end of baking if your oven heats unevenly to help the biscuits brown evenly.

In just five minutes you can transform plain feta into an irresistible snack with these marinated feta cubes. Cubes of creamy, tangy feta soak in extra virgin olive oil flavored with fresh herbs, a touch of honey, minced garlic, and a pinch of chili flakes. The result is a balanced mix of savory, sweet, and spicy that works beautifully as an appetizer, a component for boards and salads, or a simple everyday snack.

Quick and Easy Marinated Feta Cubes

Feta is one of those cheeses that elevates so many dishes. Marinating a block of full-fat feta in a fragrant oil takes its flavor to the next level — soft and creamy, bright and savory, with subtle sweetness and a gentle heat.

This recipe is fast to prepare and benefits from a couple hours of chill time so the flavors can infuse. Keep a jar in the fridge for easy snacks, to add to salads or mezze platters, or to use as a flavorful garnish for grilled fish, roasted vegetables, or simple pasta.

Store the feta in an airtight container covered with olive oil to preserve it and keep the leftover oil for dressings or drizzling.

Ingredients You’ll Need

Feta Cheese – Use a block of full-fat feta packed in brine. It holds its shape and absorbs the marinade best.

Extra Virgin Olive Oil – The base of the marinade; choose a good-quality olive oil for clean, peppery flavor.

Garlic Cloves – Mince finely for even distribution.

Chives – Fresh chives add a mild onion-like freshness.

Honey – A small amount balances the tang of the cheese.

Fresh Oregano – Fresh herbs give a brighter, livelier flavor than dried.

Chili Flakes – Adjust to taste for a hint of heat; sliced jalapeños can be substituted if you prefer fresh heat.

Become a Marinating Master with this Marinated Feta Recipe

Create the marinade. In a small bowl whisk together extra virgin olive oil, honey, minced garlic, finely chopped chives, fresh oregano, and chili flakes until combined.

Dry and cut. Pat the feta dry with a clean paper towel and cut it into bite-sized cubes.

Coat evenly. Spread a couple of spoonfuls of the marinade in a large, shallow dish. Add the feta cubes and pour the remaining marinade over them. Gently toss so every cube is coated.

Marinate. Cover and refrigerate for at least 2 hours (4 hours is ideal) so the flavors develop. If possible, baste or gently turn the cubes once or twice while chilling to ensure even infusion.

Serve. Remove the feta from the refrigerator about 15–20 minutes before serving so the oil loosens and the flavors are more pronounced. Serve at near room temperature for best texture and aroma.

Serving Suggestions

These marinated feta cubes shine on their own — serve with toothpicks for easy nibbling. They also pair exceptionally well with pita chips, warm pita bread, or crusty bread for scooping. Add them to salads such as a classic Greek salad or a rustic fattoush for instant brightness. Use a few cubes as a finishing touch on grilled chicken or fish, or stir them into a warm grain bowl just before serving.

How Long Does Marinated Feta Last?

Stored in an airtight container and fully covered with olive oil, marinated feta will keep in the refrigerator for two to three weeks. The oil takes on flavor from the herbs and garlic and can be reused as a dressing, for marinating other ingredients, or drizzled over salads and roasted vegetables.

Common Questions about Marinated Feta Cubes

Do I have to use olive oil?

Olive oil is recommended because it adds richness, helps preserve the feta, and carries the flavors of the herbs and spices. A neutral oil could be used in a pinch, but it will produce a different flavor profile.

Can I add other ingredients like olives or sun-dried tomatoes?

Yes. Kalamata olives, roasted red peppers, or sun-dried tomatoes make excellent additions. Make sure all additions are submerged or well-coated with oil to preserve them.

Can I use a different cheese?

Feta is ideal for this preparation, but firmer cheeses such as halloumi or denser goat cheese rounds can work if they hold up when cut and marinated. Softer cheeses may break apart.

Do I need to bring it to room temperature before serving?

Yes. Let the marinated feta sit about 15–20 minutes at room temperature so the oil loosens and flavors are more noticeable. Chilled oil can mute aromas and make the texture firmer.

More Ways to Use Feta Cheese

High-Protein feta cucumber sauce — blend feta with Greek yogurt and cucumbers for a creamy dip.

Fried feta rolls with hot honey — wrap feta in phyllo and fry for a crunchy, sweet-savory bite.

Greek-style roasted potatoes with whipped feta — toss roasted potatoes with whipped feta for a rich finish.

Feta gyro-style pizza — top pizzas with marinated feta cubes for tangy contrast.

This cinnamon swirl buttermilk loaf is simple to make, with a crunchy cinnamon-sugar crust and a tender, moist interior. Swirls of cinnamon baked into the loaf give each slice a comforting, warming flavour that’s perfect for breakfast or an afternoon treat.

Why You’ll Love It

Easy: The method is straightforward — whisk wet ingredients in one bowl, combine dry ingredients in another, then fold together. The batter is mixed by hand, so no mixer is needed.

Crunchy top, soft crumb: The cinnamon-sugar topping bakes to a lightly crunchy crust that contrasts beautifully with the soft inside of the loaf.

A pleasant change: If you usually bake lemon or banana loaves, this cinnamon swirl buttermilk loaf is a fresh, cosy alternative that’s equally satisfying.

Step by Step Instructions

Preheat the oven to 350°F (175°C). Grease a standard loaf pan and line it with parchment paper for easy removal.

Cinnamon Sugar Swirl

In a small bowl combine 2 1/2 teaspoons ground cinnamon, 1/4 cup white sugar, and 2 tablespoons brown sugar. Stir until evenly blended and set aside.

Loaf Batter

In a large bowl whisk together 1 cup buttermilk (room temperature), 1 1/4 cups white sugar, 2 large eggs (room temperature), 2 teaspoons vanilla extract, and 1/4 cup vegetable oil until smooth.

In a separate medium bowl whisk together 2 cups all-purpose flour (spooned and levelled), 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt.

Add the dry ingredients to the wet ingredients and mix gently just until the batter comes together. Avoid over-mixing — small lumps are fine and will give a lighter texture.

Pour about one third of the batter into the prepared loaf pan and spread it evenly. Sprinkle half of the cinnamon-sugar mixture over this layer, spreading it to the edges. Add the remaining batter on top and finish by sprinkling the remaining cinnamon-sugar evenly over the surface.

To create swirls, gently drag a butter knife vertically and horizontally through the batter so the knife reaches the bottom of the pan; this forms the classic cinnamon swirl pattern without fully blending the layers.

Bake for about 55 minutes, or until a toothpick inserted into the centre comes out clean or with a few moist crumbs. Allow the loaf to cool in the pan to room temperature before lifting it out and slicing.

Storing the Loaf

Store the cooled loaf in an airtight container at room temperature for up to three days. For longer storage, slice and freeze portions wrapped tightly for up to two months; thaw at room temperature or gently reheat slices.

What Does “Spooned and Levelled” Flour Mean?

“Spooned and levelled” describes a method of measuring flour to avoid packing extra into the cup. Use a spoon to transfer flour into your measuring cup, then scrape the top with a straight edge to level it off. Scooping the measuring cup directly into the flour can compress it and add more than the recipe intends.

Should I Bring Cold Ingredients to Room Temperature?

Yes. Room-temperature eggs, buttermilk, and other chilled ingredients incorporate more easily into the batter, which reduces mixing time and helps deliver a tender, moist loaf.
